Thymiopoulos, Xinomavro 2021
The Thymiopoulos family have been growing grapes just outside the Trilofos, northern Greece, for generations. However it wasn't until 2005, when Apostolos Thymiopoulos took the leap into winemaking, focussing solely on the grape this region does best: Xinomavro. He truly believes in sustainable viticulture and minimum intervention during the whole winemaking process. Xinomavro 2021 is taken from some of the higher vineyards in the estate, where the vines are on average 26 years old. A nose of sour cherry, redcurrant, raspberry and oak moves to a structured palate with more savoury-spicy characters supported by a good level of acidity. For lovers of Nebbiolo (Barolo, Barbaresco) this is definitely one to try! Best with game.
